Stuffed Bell Peppers


Stuffed Bell Peppers 🫑


Another amazing southern treat my Mom, Grandmother and family love to prepare. This recipe can be moderated with so many different ideas..... But this one is my favourite way to make them. I like to use the sweet peppers like the yellow,orange or red ones. Many like to use the green ones so if you like them then definitely use them as well. In this recipe you can opt to steam your peppers before stuffing them to cut down on baking time.


Ingredients


● 6 Large proportioned peppers hollowed out

● 2 cups cooked rice

● Ground beef/ground pork/ground chicken or turkey.. Whichever you prefer or you can

blend a few together

● 1 can of Tomato sauce

● Bread crumbs/crackers smashed or you can use smashed pork rinds for more

flavour.

● Diced onions

● Diced celery

● Creole seasoning/ cajun seasoning

● Minced garlic

● Salt and pepper

● Olive oil

● 1 cup of parmesan cheese or mozza (optional)


Steps


● Preheat oven to 350 degrees

● Arrange your hollowed out peppers into a lightly greased pyrex dish making sure they

are snuggled in together, so they don't fall over.

● In a skillet brown your meat and set aside

● In the same skillet add a tsp of oil and saute onions, celery and garlic until onions are

soft.

● Turn your heat to low

● Add in your browned meat and stir until mixed.

● Season with creole seasoning. or cajun seasoning, salt and pepper

● Next add in your tomato sauce

● Keep on low heat and simmer for about half an hour

● In a large bowl add your bread crumbs and your meat mixture and stir

● Next .. add your rice and combine well

● Take each bell pepper and stuff each one until level. Pack them lightly.

● Add about 1⁄4 cup of water... to create steam.

● Cover them with tin foil and put into the oven for 30 mins

● After 30 mins remove the tin foil and sprinkle your cheese on top

● Bake for another 15-20 mins or until your peppers are slightly soft and your cheese is

browned.


We enjoy our stuffed peppers sided with sweet warm cornbread or a crisp salad. another great option is a cheese platter o charcuterie board. These freeze very well in a sealed container for up to 3 months. You can freeze them individually for quick lunch ideas as well, just take it out the night before.
