Creamy Pasta


Shrimp and Scallop Pasta with an Avocado Cream Sauce


Who doesn't love a great pasta that is full of flavour, colours and is easy to make. Pasta is so versatile, you can dress it down for those easy prep nights and picky eaters. Dress it up for a special night with friends, family or a romantic date night. Dishes like these pair well with wine, breads, and a variety of proteins to satisfy the pasta connoisseur or your fussy eater in the house. Pasta comes in so many shapes and sizes for fun parties, dinners, holidays etc. You will have endless options to choose from when it comes to a sauce. I love a nice smooth creamy sauce with a ton of garlic, or a rose that you can taste the fresh basil before it even hits your palette.

This creamy sauce is actually my favourite all time, when it comes to sauces! Combined with avocado, garlic and cheese that will delight you and your guests' appetite. I also love using penne noodles because they are ideal for retaining the sauce on the entire surface and it pairs so well with chunky proteins.

The colours of this dish are so gorgeous. Hints of green from the sauce, soft pinks from the shrimp, and topped off with bright green onions.


Ingredients

  • Scallops sauteed to your liking

  • Shrimp fully cooked

  • One avocado

  • A full teaspoon of crushed garlic

  • Olive oil

  • Green onions chopped

  • Half a small container of sour cream

  • Dried basil

  • Salt/Pepper

  • Lemon Juice

  • Feta Cheese


Steps

•Prepare your shrimp and scallops by sauteing them in half the garlic and a dollop of oil until done and set aside for later.

•Fill a pot of water and set to boil. I like to add a pinch of kosher salt to the water once it is boiling. Add your pasta and turn the burner down.

•Peel the avocado and smash it with the rest of the garlic, and a tablespoon of lemon juice. In a small pot add as much feta as you desire, I like about ½ cup. Add the smashed avocado mixture and blend until the feta is melted. You want the sauce to be smooth and if you find it is still chunky you can throw it in a blender for a hot minute until you get that creamy texture that is desired.

•Don't forget about the noodles that are boiling on the stove. Once done, strain into a colander and I always like to add a splash of olive oil to the strained pasta, Sprinkle some dried basil and mix the oil and seasoning together. •Build your entree …Dish up your noodles into a pasta bowl or plate, and spoon sauce over top. Add some of the Shrimp, Scallops, and drizzle sauce over the entire plated dish. Finish your creation with chopped green onions.
