Easy Pasta Meal
Everyone has seen this on Tik Tok but I have been making this for so many years. My take on this easy, delicious and healthy dish is something everyone can make. If you love pasta and want to try a recipe that looks and tastes amazing this is the one you should definitely try. If it's for your family or a quiet date night at home with little time then YES I got your back. This is my go to Vegetarian meal but you definitely can add a protein.
Ingredients
● Bow tie pasta
● Block of feta cheese
● Red onion chopped
● 2 green onions chopped
● Baby spinach... about 3⁄4 of a small bag
● One bunch of asparagus.. Chopped in half
● 2 cloves of garlic minced
● One small container of cherry tomatoes
● One container of cremini mushrooms halved
● 1 tablespoon of capers
● Roasted red peppers chopped... about 4 from a jar
● Salt and pepper to taste
● Olive oil
You can also add a protein to make this more hearty. These are my favourites
• Chicken breasts cubes and cooked
• Cooked Shrimp de-tailed
• Scallops sautéed
• Beef strips cooked
Large cast iron fry pan and a medium pot ( to boil pasta)
Steps
Set the oven at 375 to begin. In your cast iron pan add 2 tablespoons of olive oil and place your block of feta cheese in the middle of the pan. Add cherry tomatoes and the garlic into the pan, making sure to spread them around the outside. In a bowl add chopped red onion, halved mushrooms, asparagus, roasted red peppers and season with salt and pepper to taste. Next add these ingredients to the pan on top of the tomatoes and cheese. Pour 1⁄4 of a cup of olive oil over the mixture followed by the capers. Bake in the oven for about 40mins, making sure you mix half way through. Your tomatoes will begin to soften enough that you can press a spoon to “pop” them. Once your time is up take out of the oven and pop all your tomatoes and mix around so the feta mixes into all the ingredients. This process creates you sauce.
While your sauce is being baked, fill your pot with water and bring to a boil. Add your pasta and cook until soft, then drain.
On a plate add some pasta and spoon your sauce over top adding some fresh chopped green onions over the top
