Chicken Parmigiana


How can something this simple be so good???!!! This is a classic easy dish to prepare for your family. Crispy, juicy chicken breasts topped with homemade marinara sauce and a butt load of ooey gooey mozzarella cheese. Whether you make the Marina from scratch or use your favorite jar from the store it will be delicious and your family will be satisfied.

Side dishes that go well with this amazing creation range from roasted or mashed potatoes, pasta, asparagus or caesar salad. It also makes for a great leftover on a toasted french roll, the next day for lunch.


What you will need


● Cutting board

● Baking dish large enough for all chicken breasts to lay flat

● Skillet

● 3 shallow dishes

● Tongs


Ingredients


● Chicken breasts

● Flour

● Salt and Pepper

● Basil

● Garlic minced

● Eggs 2-3

● Panako

● Oil

● Marinara sauce, homemade or jar

● Thick sliced mozzarella cheese

● Grated parmesan cheese


How to prepare


1. Prepare your chicken by placing it on the cutting board and patting the chicken dry. Then season both sides with salt and pepper.

2. Set your 3 shallow dishes up.

1 Flour coating in the first dish with some salt and pepper

2 Egg mixture , beat the eggs and add your minced garlic

3 Panako with garlic powder, onion powder, grated parmesan(stir)

3. Using your tongs, coat chicken in flour mixture until covered. Dip in egg mixture until all sides are covered. Let excess drain off. Next dredge the chicken through the seasoned panko bread crumbs making sure all sides are fully covered. Shake excess off.

4. Repeat all steps until all pieces are coated.

5. Take your baking dish and lightly cover the bottom of the dish with some of the marina sauce and add a little of the basil.

6. Preheat your oven to 400’

7. Take your skillet and place over medium heat and add enough oil to cover the bottom

of the pan. When oil is hot ( 375-400’) add the chicken to the pan and fry each side for 2-3 mins or golden crispy. Once cooked, remove from the pan and place them into the baking dish.

8. Pour the rest of the marinara sauce over the chicken

9. Place a thick slice of mozza over each breast and sprinkle more parmesan cheese.

10. Bake your chicken for about 15 mins or until the internal temp reaches 165’

11. Sprinkle some fresh basil over the top before serving.
